Chicken Biryani is a delicious savory rice dish that is loaded with spicy marinated chicken, caramelized onions, and flavorful saffron rice. For my Biryani, I simplify the order of operations, while retaining the traditional layered approach to assembling it.
What you need for making good biriyani?
-- To make a good biriyani,always use best quality ingredients.The choice of good quality basmati rice,whole spices,spice powders,chicken and ghee all contributes to the flavour of chicken biriyani.

How to make the best chicken biriyani?
- Marination:The first step to make the best chicken biriyani is Marinating chicken with yogurt and spices .yogurt tenderizes the chickenand the spices engance the flavours.Marinating and resting chicken makesit soft and good .so do not skip that.if you do not eat curd then can substitute it with coconut milk.
- Rice preparation:Basmati rice should be rinsed very well in water to get rid of the starch.This prevents the rice grains from turning mushy.soaking the rice helps to cook the rice grains long and fluffy.so do not skip
- Water:simple drinking water.quantity of it i described below.

Ingredients of chicken biriyani:
Marination ingredients:
- 500 gm chicken.
- 3 tablespoons of yogurt(curd or dahi).
- 1 1/4 tablespoons ginger garlic paste.
- Salt as you needed.
- 1/4 teaspoon of turmeric or haldi.
- 1 teaspoon of red chilli powder.
- 1 tablespoon of garam masala or biriyani masala.
Spices:
- 1 bay leaf or tej pata.
- 4 green cardamoms or choto elaichi.
- 5 cloves or lavang.
- 1 inch cinnamom or dalchini.
- 1 star inise or chakri phool.
- 1 teaspoon saahi jeera or caraway seeds.
- 1 strand mace or javitri.
Other ingredients for chicken biriyani:
- 500 gm basmati rice.
- 2 tablespoon ghee or oil.
- 1 large onion.
- 100 ml mint or pudina.
- 1 piece green chili.
- 100 ml plain yogurt or curd or dahi.
- 1/2 teaspoon red chili powder.
- 1 teaspoon garam masala or biriyani masala.
- 750 ml water.
- 2 tablespoon fried onion.
- 1 teaspoon salt.
Preparation of chicken biriyani:
- To make biriyani masala powder add nutmeg,cardamoms,pepper,cloves,cinnamom ,fennel and stone flower to a mixer jar and make a fine powder.
- Make gashes on the chicken and add to a bowl.Also add 3 tbsps curd and ginger garlic paste,1 tbsp biriyani masala powder,1/2 tsps salt,red chili powder,turmeric.decrease the amount of chili if you have kids.
- Mix everything well and marinate the chicken.cover and set this aside for 1 hour.
- Add basmati rice to a large pot and clean it very well with water at least four times.soak it for 30 mins and drain to a colander after 30 mins.
- Heat ghee or oil in a por or pressure cooker.you should use a large cooker for this.saute spices for a minute.
- Fry onions untill light brown.
- Add marinated chicken.
- Saute the chicken on a medium flame for 5 mins. Lower the flame completely.cover and cook untill it soft and cooked.
- Check if the chicken is cooked and there is no moisture left in the cooker.
- Check the salt and add as needed .Add green chili,biriyani masala or garam masala and mint.
- Mix everything well and spread it evenly in a single layer.
- Layer the rice all over the chicken.pour 3 cups water or coconut milk to a bowl and add salt.stir and taste the water.it must be slightly salty.pour 2 cups across the side of a cooker.pour 1 cup water more over the rice gently.
- Level the rice gently on top.Add some pudina and fried onions.if you have not add salt to watet earlier,sprinkle it as needed.I used 1 tsp sea salt. Do not mix up everything,the taste of biriyani cooked in the shown method is different.
- Finally set a medium flame on a regular burner.cover and cook for 1 whistle. If you use pot then cook untill the rice is completely ready.remove the cooker from burner further to stop cooking.
- When the pressure goes down,open the lid and fluff up with a fork.
Serve the best chicken biriyani as you wish(top layer of rice and bottom layer of chicken).Enjoy it with raita or curd or dahi with your family or friends.
